Abstract

Bacillus cereus is a bacterium that causes food poisoning caused by foods made from vegetable flours such as pasta, rice, potatoes, bread and noodles. According to the National Poisoning Information Center in 2014, there were 855 cases of food poisoning deaths caused by several types of bacteria, one of which was Bacillus cereus. The common treatment for infectious diseases is antibiotics, but there is a lot of resistance to antibiotics caused by improper use. The case of resistance resulted in the need for alternative therapies for antibacterial agents derived from plants that have high potential as antibacterial agents. Coriander seeds have potential as an antibacterial agent against Bacillus cereus ATCC 11778 which is a pathogenic bacterium that causes infection in humans. The purpose of this study was to determine the antibacterial activity of coriander seed extract and to determine the minimum inhibitory concentration (MIC) of coriander seed extract against Bacillus cereus bacteria. The research method used is experimental. Coriander seed extract samples were extracted using the soxhletation method with a concentration series of 5%, 10%, 15%. The positive control used was vancomycin and the negative control was 96% ethanol. The 5% extract was followed by dilution testing to determine the Minimum Inhibitory Concentration (MIC) using visual observations and a UV-Vis spectrophotometer. The results of the antibacterial activity test of coriander seed extract showed antibacterial activity against Bacillus cereus ATCC 11778. The inhibition zone results for coriander seed extract 5%, 10%, 15% respectively were 19.50 mm ± 2.65, 22.33 ± 1 .25mm, and 23.83 ± 0.76 mm. Antibacterial activity is thought to come from the activity of terpenoid compounds, flavonoids, tannins and saponins. Minimum Inhibitory Concentration Value of coriander seed extract was 0.156%.
