Abstract

Formaldehyde is a chemical solution that has a slightly acidic, very pungent and corrosive odor. Formaldehyde steam stimulates the mucous membranes of the nose, throat and burning sensation. The use of formaldehyde as a preservative in food still occurring to date, one of which is the use of formaldehyde in salted fish consumed by community. The purpose of this study first, determine the comparison of optimum condition of visible spectrophotometry method and acid-base titration method on analysis formaldehid of salted fish sold at Tulungagung. Second, determine the content of formaldehyde contained in salted fish at Tulungagung wich was analyzed using visible spectrophotometry method and acid-base titration method. The type of this study was experiment which was qualitatively identified using the peel of dragon fruit and KMnO4 and quantitative using visible spectrophotometric method and acid-base titration. The optimum wavelength in this study is 530 nm. The optimum solvent for visible spectrophotometry method is aquades. the optimum titrant concentration for acid-base titration method is 0,2 N. Based on the results obtained from 6 salted fish samples analyzed qualitatively, all samples positive contain formaldehyde. In a quantitative analysis using visible spectrophotometric samples containing formaldehyde with a content of 72 ± 1,583 ppm and which uses an acid-base titration method containing formaldehyde with a content of 0.017 ppm. Keyword: salted fish, formaldehyde, KMnO4, peel of dragon fruit, visible spectrophotometry method, acid-base titration method.
