Abstract
Salted fish is processed products processed by salting. In addition, saltwater storage capacity can not last long. So many manufacturers are deliberately looking for alternative ways to reduce the number of losses by adding harmful chemicals such as formaldehyde in the process of salted fish to be stored longer. Where formaldehyde when entering into the body will cause poisoning to death. This study aims to determine the optimum conditions and content of formaldehyde in salted fish circulating in the markets in Tulungagung. The method used for the analysis of formaldehyde in salted fish is the determination of the optimum titrant concentration and the qualitative and quantitative analysis. Optimum result was obtained by optimum condition of titrant HCl at concentration 0,2 N while in qualitative analysis all positive samples contain formaldehyde with sample content A = 0,215 ppm, sample C = 0,174 ppm, sample E = 0,142 on quantitative analysis.
